Rainbow pasta salad

Ingredients

✓    7 oz (200 g) La Moderna® Kids Pasta (Animals or Dinosaurs)
✓    ¾ cup cherry tomatoes (can be mixed colors), quartered
✓    ½ cucumber, finely diced
✓    ½ orange bell pepper, chopped or sliced
✓    ⅓ cup yellow sweet corn (canned, cooked, or thawed if frozen)
✓    75 g panela cheese, diced
✓    Fresh basil or parsley leaves, to taste
✓    1.5 tbsp olive oil
✓    Salt and black pepper, to taste
✓    Juice of half a lemon (adjust to taste)

Preparations

Cook the pasta:
Boil pasta in salted water according to package instructions. When al dente, drain and rinse with cold water to stop cooking. Let it cool completely.

Prepare fresh ingredients:
Chop tomatoes, cucumber, and bell pepper into small pieces for easy mixing and eating.

Mix ingredients:
In a large bowl, combine cooled pasta with tomatoes, cucumber, pepper, corn, and cheese.

Dress the salad:
Pour olive oil and lemon juice over the salad. Season with salt and pepper. Mix gently.

Garnish and serve:
Top with fresh basil or parsley just before serving. Serve cold.
